Frittata Primavera

1 med onion, chopped
1 med red or green bell pepper cut into strips
1 med potato, peeled and grated (about 1 cup)
1 cup coarsely chopped broccoli
1 tsp. dried oregano leaves, crushed
1/8 tsp ground black pepper
1 tbls margarine
1 (8-ounce) container egg substitute (Egg Beaters, etc)

In 10-inch nonstick skillet or omelet pan, cook and stir onion, bell pepper, potato, broccoli, oregano and black pepper in margarine until vegetables are tender-crisp.

In small bowl, with electric mixer at high speed, beat egg substitute for 2 minutes until light and fluffy; pour over vegetables. Cover and cook over medium heat for 5 to 7 minutes until eggs are set. Serve from pan or carefully invert onto warm serving plate. Serve immediately.
