Despite their mouthwatering sweetness, melons are surprisingly blood-sugar friendly, making them perfect with breakfast, as snacks, or in fruit salads, and even in salsa. Yes, the sugar they contain is quickly converted to glucose—or blood sugar—but melons are mostly water (as much as 90 percent), so they don’t have as much sugar as you’d think. Because of that high water content, melons are remarkably low in calories. An entire cup of melon contains only 45 to 60 calories!


I found this recipe online...This salad has several taste and texture surprises that not only make it incredibly delicious, but also perfect for diabetics, as well as, anyone else who enjoys eating healthy. In particular, vinegar, lemon juice, cinnamon and pumpkin seeds are all wonderful for your blood sugar and overall health.

Cantaloupe Salad with 

Raspberry Vinaigrette

1 tablespoon hulled pumpkin              seeds 
1/4 cup seedless raspberry all-fruit    spread 
1 tablespoon balsamic vinegar 
2 teaspoons fresh lemon juice 
1/4 teaspoon cinnamon 
1 large cantaloupe cut into 8                 wedges 
1 cup blueberries  

1.    Toast pumpkin seeds in a small, heavy skillet over medium heat until they begin to pop, about 5 minutes. Set aside to cool. 
2.    Whisk together the raspberry spread, vinegar, lemon juice, and cinnamon in a large bowl.
3.    Add cantaloupe and blueberries to bowl and toss to combine. Sprinkle with toasted pumpkin seeds.

Serves 4
