Individual Pear Upside-Down Cakes

Nonstick cooking spray
2 tablespoons sugar-free strawberry preserves
1 pear, halved, cored and thinly sliced
1/4 cup cake flour
1 1/2 tablespoons sucralose sweetener
3 egg whites
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla extract

Lightly spray 2 microwavable oversized (12 ounces) coffee cups with cooking spray. Place 1 tablespoon strawberry preserves in each cup. Layer pear over preserves. Set aside

Sift flour and 1 tablespoon sucralose together in mixing bowl; set aside.

Beat egg whites until foamy. Add cream of tartar and continue beating until almost stiff. Gradually add remaining 1/2 tablespoon sucralose. Mix on high for 1 minute. Fold in vanilla, then flour-sucralose mixture. Pour batter into coffee cups. Place cups in microwave and cook on HIGH for 3 minutes.

Turn out onto dessert plate. Serve hot or cold.
