Parmesan Roasted Asparagus

1 pound asparagus, trimmed, cut into thirds
1 tablespoon (1/2 ounce) grated 
                 Parmesan cheese
2 teaspoons olive oil, 
                 preferably extra virgin
Pinch of salt
Ground black pepper
4 lemon wedges or white wine vinegar

1. Preheat the oven to 425°F. In a baking pan large enough to hold the asparagus in a single layer, combine the asparagus, cheese, oil, and salt. Toss to coat the asparagus evenly.
2. Bake for 8 to 10 minutes, or until the asparagus is tender (time will vary depending upon the thickness of the asparagus). Season to taste with pepper. Serve with lemon wedges or a splash of vinegar.

MAKES 4 SERVINGS…Diabetic friendly.
