Zucchini Boats

2 zucchini (6-8 ozs ea.) halved lengthwise
1 teaspoon olive oil, preferably extra virgin
Salt
Ground black pepper
4 veggie burgers, thawed and crumbled       (I use Morningstar Farms)
1/2 cup marinara sauce
2 tablespoons part-skim ricotta cheese

Preheat the broiler. Coat a rimmed baking sheet with vegetable oil spray.

Using a teaspoon, remove the seeds from the zucchini halves, creating a trench in the center. Rub the zucchini with oil and season with a pinch of salt and pepper to taste. Place cut-side up on the reserved pan. Place crumbled veggie burgers in an even layer around the zucchini halves.

Broil for 8 minutes, or until the zucchini are fork-tender and the veggie crumbles are browned.

Meanwhile, in a microwaveable bowl, cook the sauce until warmed through.

Remove the zucchini and transfer to a platter. Combine the veggie crumbles and sauce. Spoon into the. zucchini. Serve Warm or at room temperature, topped with 1/2 tablespoon of cheese oh each boat.

TIP: For a pretty effect, replace one of the zucchini with a yellow summer squash.
