CIDER-POACHED APPLES 
WITH CINNAMON YOGURT


2 cups apple cider or apple juice
1 cinnamon stick or 1/2 teaspoon ground 
   cinnamon
2 Golden Delicious apples, peeled, halved 
    and cored
1/2 cup vanilla fat-free sugar-free yogurt 
1/2 teaspoon ground cinnamon
1/2 cup chopped pecans, toasted


1. Bring apple cider and cinnamon stick to a boil in medium saucepan 
    over high heat.
    Boil, uncovered, 25 minutes or until liquid is reduced to about 1 cup.
2. Add apples; cover and simmer 10 minutes or until apples are just tender. 
    Gently transfer apple halves and poaching liquid to medium bowl; 
    cover and refrigerate until cooled.
3. Combine yogurt and ground cinnamon in small bowl; reserve 2 tbls. 
    Divide remaining yogurt mixture evenly among 4 dessert dishes. 
    Drain apple halves and place on top of sauce. 
    Sprinkle with toasted pecans; drizzle with reserved yogurt mixture.
