OATMEAL BANANA PANCAKES

1/2 cup old fashioned oats
11/3 cups fat-free (skim) milk
1 cup all-purpose flour
2 teaspoons baking powder
1 egg, beaten
2 teaspoons canola oil
1 large banana, peeled and cut into 1/4-inch slices
1/2 cup sugar-free strawberry preserves

1. In large bowl combine oats and milk; let stand 10 minutes.

2. Sift flour and baking powder onto waxed paper. Add flour mixture, egg and oil to oat mixture; stir until dry ingredients are moistened. Stir in banana.

3. Heat large griddle coated with nonstick cooking spray over medium heat. Drop batter by scant'/ cupfuls onto griddle. Cook 2 to 3 minutes or until bubbles form on top and bottoms are golden brown. Turn; cook 1 to 2 minutes more or until bottoms are golden brown.

4. Microwave preserves on HIGH 1 minute or until hot (syrupy). Serve with pancakes.

Makes 6 servings (3 pancakes and 2 tablespoons preserves per serving)
