PUMPKIN CURRANT COOKIES

Preheat oven to 350 degrees

½ cup unsalted butter or margarine
1 cup brown sugar
2 eggs
1 ¼ cups pumpkin puree

2 cups flour
1 tbsp baking powder
1 tsp cinnamon
¼ tsp ground nutmeg
¼ tsp. salt
2/3 cup currants


In a large bowl, cream together the butter and sugar.
Add eggs and pumpkin puree: Mix well.
Blend in flour, baking powder, cinnamon, nutmeg and currants.

Drop spoonfuls of this mixture onto a greased cookie sheet and bake for ten minutes.

Cool on a wire rack for as long as you can resist them!
