~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ My son, Jason, loved to cook and had plans to open his own restaurant. Today, I am sharing his recipe for one of my favorite meals. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~


JASON'S VEGETABLE LASAGNA


YOU WILL NEED:
1 LARGE SKILLET
1 LARGE BOWL
1 LARGE COLANDER
1 ALUMINUM, THROWAWAY PAN 9" X 11" X 4" DEEP


1 BOX OTHER WHOLE WHEAT LASAGNA NOODLES, COOKED & DRAINED
1 BAG FRESH SPINACH, WASHED AND DE-STEMMED
2 MED. ZUCCHINIS, (6" LONG AND HALF DOLLAR SIZE ROUND)
~~~QUARTERED, THEN SLICED CROSSWISE INTO 1/2" PIECES.
2 MED. YELLOW SQUASH
~~~(ABOUT THE SAME SIZE AS ZUCCHINI) AND CUT THE SAME WAY.
1-8 OZ. PKG. SHREDDED CARROTS
1-8 OZ. BOX SLICED FRESH MUSHROOMS, (MORE IF YOU LIKE).
1 LG. ONION, SLICED LONGWAYS (LIKE JULIENNE CUTS)
3-12 OZ. PKGS. SHREDDED, 3 CHEESE MIXED
~~~(PARMESAN-MOZZARELLA-MONTERREY JACK)
1-15 OZ.CAN DICED ITALIAN STEWED TOMATOES, DRAINED
3-15 OZ. CANS ITALIAN TOMATO SAUCE OR REGULAR TOMATO SAUCE
2 CLOVES GARLIC, FINELY DICED
ITALIAN SEASONING, SALT, PEPPER

COOK LASAGNA NOODLES ACCORDING TO PACKAGE INSTRUCTIONS.
SAUTE ALL FRESH VEGETABLES (EXCEPT SPINACH) IN MARGARINE UNTIL TENDER. MOST SKILLETS WILL NOT ACCOMMODATE ALL VEGETABLES AT THE SAME TIME, SO, SAUTE AS FOLLOWS: ONIONS AND CARROTS, THEN ZUCCHINI AND SQUASH, THEN MUSHROOMS AND GARLIC. AS EACH PAN FULL IS DONE, PLACE IN COLANDER TO DRAIN. IN LARGE BOWL MIX SAUTEED VEGETABLES AND CANNED STEWED TOMATOES. SET ASIDE.

BE SURE NOODLES ARE WELL DRAINED. PRESS BETWEEN PAPER TOWELS IF NECESSARY.

YOU ARE NOW READY TO LAYER AS FOLLOWS:

3 NOODLES IN BOTTOM OF PAN LONGWAYS - 1/2 PKG. SPINACH LEAVES -1 PKG. CHEESE - 1/2 SAUTEED VEGETABLES - 1 CAN TOMATO SAUCE -SPRINKLE WITH ITALIAN SEASONING, SALT, PEPPER - 3 NOODLES (CROSSWISE) -1/2 PKG. CHEESE - REST OF SPINACH - 1/2 PKG. CHEESE - REST OF VEGETABLES - 1 CAN TOMATO SAUCE - SPRINKLE WITH ITALIAN SEASONING, SALT, PEPPER - 1 PKG. CHEESE - 3 NOODLES (LONGWAYS) - 1 CAN TOMATO SAUCE.

BAKE IN OVEN AT 350 DEGREES FOR 30 MINUTES UNCOVERED. THEN COVER WITH FOIL AND BAKE FOR 30 MINUTES MORE. IF DESIRED, SPRINKLE WITH GRATED PARMESAN CHEESE FOR LAST 30 MINUTES BAKING. REMEMBER TO PLACE COOKIE SHEET UNDER PAN TO CATCH ANY SPILLS OR OVER FLOWS.
