Enjoy this berry compote using your favorite mix of fresh or frozen berries—strawberries, raspberries, blackberries, blueberries boysenberries.

1 cup mixed berries
2 eggs
2 tablespoons low-fat milk
4 slices whole wheat raisin bread or fruit loaf
2 tablespoons pure maple syrup

Put the berries in a small saucepan and gently heat until the warm and have softened.
Meanwhile, break the eggs into a flat-bottomed dish, add th whisk with a fork to combine.
Add the slices of fruit bread and both sides, with the egg mixture.
Heat a non-stick frying pan over medium heat and dry-fry 2 eggy bread for about
3 minutes on each side, or until brown. R the remaining 2 slices.
Cut the bread in half and serve topped berries and 2 teaspoons of the maple syrup
drizzled over the top.

TIP: Berries don't ripen once they're picked, so choose carefully—the deeply colored ones  tend to have the most flavor.
